A refined Tasmanian sparkling wine crafted by Ed Carr, combining Pinot Noir, Chardonnay and Pinot Meunier from Tasmania's cool-climate vineyards. Extended ageing on lees gives the wine impressive complexity, with aromas of gunflint, white stone fruit, grapefruit pith and oyster shell. The palate is elegant and mineral-driven, with fine persistent bubbles, vibrant acidity and a long, savoury finish.

The NV Brut Elite 2018 is creamy and fresh in the mouth: layers of crushed shells and white citrus, almond meal and a gentle biscuit sway on the palate. I asked Ed Carr about this and he said, "Yes, I often see a honey biscuit character in the wine." Verified. Made in the traditional method, this is handpicked, best juice of the press, with 100% malolactic fermentation and aging in 5% first-use oak and 5% in second and third-use oak. There are some much larger foudres involved in the reserve program. The first time we will see the benefits of this is in the 2022 blend. The 1801 on the neck label refers to the 2018 vintage, comprising much of the base vintage. This wine has spent four years on the lees as a minimum, and it receives a tailored dosage, here just three grams per liter. You get bone broth, enoki, tatami mat and brine, along with pressed flowers and cracked oyster shell. Really lovely. 12.5% alcohol, sealed under cork.

Pale in appearance. The nose is fresh and lifted, with notes of minerals, sea shells, talcum powder and white flowers. The palate is light-bodied with a finely integrated mousse and striking acidity, giving notes of lemon pith, grapefruit and orange blossoms. A lovely NV methode traditonnelle. Drink or hold.

Very good, complex, enticing aromas, some savoury leatherwood honey, nutty, wafery, but still so youthful and lean on the palate: an Aspro-like minerality and texture. Will benefit from more time under cork. Max Allen
