To celebrate Chinese New Year under Rabbit Year early 2023, I worked on a project with my colleagues at Bouchard Pere & Fils to release a Limited Edition cases in Asia-Pacific celebrating the last three years under same zodiac sign : 1987, 1999 and 2011.

Each vintage represented by a precious bottle from the Estate Bouchard Pere & Fils aged in perfect conditions in our cellars at the Castle of Beaune.

Tasting profile of each wine

1. Le Corton Domaine 1987 (each Bottle will be checked and recorked before shipment guarantying a perfect bottle)

* Appearance: Beautiful dark ruby color, tiled reflections
* Nose: Fresh with notes of raisins, figs, kirsch with a hint of caramel and a smoky finish
* Palate: Fresh with a little acidity, tannins present

2. Clos Vougeot Domaine 1999

* Appearance: Beautiful dark ruby color
* Nose: Kirsch, finesse, still a little reserved
* Palate: Still a little closed, round tannins

3. Bonnes-Mares Domaine 2011

* Appearance: Beautiful dark garnet colour, mauve to brown-tiled reflections
* Nose: Jam, blackberries, blueberries, floral notes, light toasted grilled
* Palate: Unctuous and structured at the same time
