Sourced from premium vineyards across Padthaway, Coonawarra, McLaren Vale, Barossa Valley, and Wrattonbully, the wine is matured for 12 months in French and American oak, adding complexity while preserving vibrant fruit character. Aromas of blackcurrant, cassis, violet, graphite, pencil lead, fresh herbs, and subtle baking spices lead to a full-bodied palate layered with blackberry, cocoa, coffee, mint, and finely integrated oak. Supported by refined tannins, bright acidity, and a long, polished finish, Bin 407 is beautifully approachable in its youth while offering excellent cellaring potential. This is made from declassified vineyards for the famed Bin 707 due to a challenging cool vintage. Aromas of blackcurrants, violets, bitter chocolate, baking spices and scorched earth. The palate is full-bodied with a textural yet refined palate and finely integrated tannins. Great balance of freshness and power. Drink or hold.

The 2023 Bin 407 Cabernet Sauvignon carries aromatically both sweet fruit and dried mint, with tannins through the finish that both dry the fruit characters and structure the wine. This is elegant, in its way. It is sourced from Padthaway, Coonawarra, McLaren Vale, Barossa Valley and Wrattonbully (all in South Australia). 14.5% alcohol, sealed under natural cork.

In a good Cabernet year, Bin 407 is usually a personal coup de coeur, especially at its price point. But 2023 was challenging in Coonawarra, so no Bin 169 was made, and no Coonawarra fruit went into Bin 707 either. A little went into this, but the majority was from Padthaway (30%) along with McLaren Vale, Barossa Valley and Wrattonbully. Consequently it is not as beguiling as usual, though still well constructed, thanks to cool acidity, firm tannins and 12 months in French oak (21% new) and American oak (11%) hogsheads. Under the coffee and vanilla oak cloak, the blackberry and cassis fruit showcases a herbal edge – mint, menthol and jalapeno – but also a tight-knit mineral core of ink, tarmac, black pepper and pencil lead. A couple of years should tease out more charm and complexity.

Launched with the 1990 vintage in 1993, Bin 407 was developed in response to the increasing availability of high-quality Cabernet Sauvignon fruit. Inspired by Bin 707, Bin 407 offers varietal definition and approachability, yet still possessing structure and rich depth of flavour. Textbook Cabernet Sauvignon, the expressive Bin 407 demonstrates the reward of Penfolds multi-regional blending philosophy. A core of ripe fruit is well supported by sensitive use of French and American oak.
Colour: Dark plum, opaque.
Nose: A blend of raw (unroasted) coffee beans, pencil shavings and graphite, establish a nose that speaks to varietal character. A wild herb garden unfolds, bringing marjoram, thyme flowers, rocket, sage and rosemary while notes of crème de cassis liqueur reinforce varietal credentials. Richness ensues with the aroma of Portuguese tart custard cream. Overall, sweet notes dominate but are beautifully anchored by earthier elements.
Palate: The core is undeniably sweet/rich yet sophisticated. The wine opens expansively — firm in structure yet big and glossy on approach. Tannins are remarkably balanced; they assert their presence without detracting from the lush blackcurrant fruit at its heart. Freshness is maintained through lively acidity, contributing greatly to the wine's depth and length. Well-integrated oak underpins these flavours without overwhelming them — focused and enhancing rather than competing with the fruit profile. A hint of Sarsaparilla adds an unexpected twist that lingers into the finish.
