I like the nose. Beef stock and porcini. Earthenware. Grounded. Then, ginger and orange marmalade with some peony and redcurrant crunching beyond. This is another richly flavored fizz, dense, full and playing the aldehydic card of toast and creaminess with a stacked deck of complexities. Yet the aura is less obvious and more savory. What I really like about this is the complete, mineral-clad filigreed finish. A superlative Tasmanian fizz. Drink or hold.

A blend of Chardonnay and Pinot Noir in the classic Arras house style with seven years tirage. Stone fruit, ripe citrus, Meyer lemon, sun-kissed apricot blossom, hint of flor and oatcake. The palate is plentifully autolytic, with extraordinary length that tucks into the corners and unfurls slowly. Still fresh and beautifully structured. All mineral on the finish. Fine bead. Exceptional complexity, shape and structure. Pure joy.

The 2015 Methode Traditionelle Grand Vintage comprises 65% Chardonnay and 35% Pinot Noir. "We aim to blend it for the seamlessness on the palate." says winemaker Ed Carr. Seven years on lees, and the wine is fresh, creamy and very fine. It's complex, rounded and plump, lighter in color than the Blanc de Blanc vintage from the same year tasted beside it, which I find interesting. This is mouthfilling, long and chalky. I love the complexity in the mouth, and the way the wine feels. It's very, very good. 12.5% alcohol, sealed under cork.

The 2015 vintage has more depth and poise than the 2016. I wonder why? More bottle age? Smells of pears and (weirdly) of bubble bath. Tiny bubbles. Touch of pithy bitterness. Green tea and chamomile. But, like the 2015, too short for a £75 wine. Tamlyn Currin
