The classical barrel-fermented 2016 Cuv?e Alexandre Chardonnay is from a zone they think is ideal for this style, Casablanca, where they have 35 hectares of Chardonnay. It's quite ripe and oaky for a cool year like 2016, hedonistic and showy, with more acidity than it usually has. It now doesn't go through malolactic fermentation. 80,112 bottles produced. It was bottled in July 2017.

Nose: Incredible expression of sweet spices as clove along with fresh fruit aromas such as lychee and quince.
Palate: The palate is elegant, with high volume in the mouth and vibrant long lasting finish.
Service and Food pairing: Serve at 12 ? C (53 ? F).
Gizzards grilled with lemon dressing, grouper fish gratin and octopus with prawns.
Harvest This harvest in Casablanca was characterized to be colder than usual, with cloudy days and little sun, driving ripeness to be very slow. The result was that harvest started with some delay the 4th of April. Fall 2016 is characterized by 2 big rain events that brought 118 mm of rain. Our wines in Casablanca, specially the Chardonnay, had a great yield and quality, with great structure and acidity.
Vinification As a general winemaking philosophy, in our Cuv?e Alexandre Chardonnay we look for elegance, balance, freshness and ageing potential. 100% of the grapes were hand harvested in small 14 kilos crates, then the whole grape bunch was directly pressed and the juice naturally decanted in stainless steel tanks at low temperature. The 2016 vintage, 56% of the juice was fermented in French oak barrels at 15-18?C and 44% was fermented in stainless steel tanks at 12-14?C.
Our Cuv?e Alexandre Chardonnay was partially aged in French oak barrels, with a 56% for 11 months ( 46% in new oak and 10% in second and third use oak ). The result is a well-integrated oak with elegant structure to enhance the natural acidity and freshness. No malolactic fermentation was done.
