From one of Chablis’ most traditional and patient winemakers, this Premier Cru Les Lys embodies both grace and strength—true to the Defaix family motto, Vir Fidelis et Fortis (“with strength and fidelity”). Sourced from south-east–facing Kimmeridgian marl soils, this 100% Chardonnay undergoes natural fermentation, full malolactic conversion, and an extended 18 months of lees stirring before long cellar aging. The result is a richly textured yet mineral-driven Chablis, offering aromas of citrus zest, white flowers, and honeyed stone fruit, with a palate that balances creamy depth and precise, saline freshness. A wine of both heritage and harmony, showing the timeless elegance of mature Premier Cru Chablis.

This wine has an imperial stature like "Caesar" admiring his lands, his vineyards and his wines. Vinification and growing:
-best of wine at pressuring
- Alcoholic fermentation with natural yeast at 18 °C for 3 weeks.
- Malolactic fermentation achieved.
- Stirring of fine lees each month for 18 months in order to concentrate the aromas, give it more fatness and enzymatic qualities for a long ageing.
