Vinification: Traditionally vinified in open stainless steel vats. Partial whole bunch fermentation with regular pumping over and pigeage to optimise colour and flavour without over extraction.
Maturation: Fifteen months in a combination of new and seasoned French oak barriques to allow the fruit to develop richness, volume and complexity. A further year’s bottle age to bring completeness.
