A major hailstorm struck Crozes-Hermitage in mid-June, leading to extensive crop losses (up to 60%, according to Frey), followed by another, smaller hail event in July that affected parts of Hermitage and Saint-Joseph. Despite those storms, parts of the vineyards still experienced hydric stress, so picking didn't begin until September 11 and concluded on September 27. \"We had smaller berries and thicker skins than in 2018,\" she said. \"We did a very soft extraction—more like an infusion. When we have these levels of richness, we imagine the finish may be unbalanced, but that's not the case. For years, much of the wine was sold in bulk to Penfolds. No doubt that helped shape the house style, as Osborne says, \"I'm not shy of tannins.\" The bulk of the vast range revolves around McLaren Vale stalwarts like Shiraz, Grenache and Cabernet Sauvignon, but Osborne has expanded the range with offers as diverse as white Rhône-style blends, botrytis Riesling and (his latest) Mencía, which Osborne claims ripens later than Shiraz, hence avoiding the worst of the summer temperatures. His visionary Cube—a multisensorial exhibit\/fine dining restaurant\/tasting room—made waves when it was first proposed and has attracted a huge number of visitors since it was completed. Harvest began on August 27th and extended through September 25th. \"There's something powerful and pure in 2018,\" she said. \"It's a mix of ’15 (power) and ’16 (purity).\" Referencing the 2018 Domaine de Thalabert, Frey said, \"We have the power and density but not like ’03. Despite those storms, parts of the vineyards still experienced hydric stress, so picking didn't begin until September 11 and concluded on September 27. \"We had smaller berries and thicker skins than in 2018,\" she said. \"We did a very soft extraction—more like an infusion. When we have these levels of richness, we imagine the finish may be unbalanced, but that's not the case. She brought representative barrel samples of the 2018s, plus the bottled 2017s, which we tasted through before dining. This year, Frey was excited to show me the 2017 Côtes du Rhône Parallele 45, which is now made using only organic grapes. At up to two million bottles (red, white and rosé) per year, that's no small achievement. But as always, we spent the most time on the wines produced from the firm's own vineyards, which are all farmed biodynamically. Frey explained that they cannot be certified, as the winery also processes grapes and wines from the négociant operations. The grapes are all destemmed, although she said they will experiment with whole clusters. \"When we did it in 2013, for me it was not OK,\" she said. The vision was to wait until resources permitted and plant this Ares of land as specifically as possible. Just before the 2015 vintage a further 37 acres of land were purchased, which included 16 acres of established Shiraz vines. This vineyard produced 27 tonnes in its first vintage, with fruit going into My Hands, Ares, Single Vineyard and a few barrels to Bella’s garden.\u003c\/p\u003e\n\u003cp\u003eTASTING NOTES:\u003cbr\u003eWritten by Two Hands Proprietor Michael Twelftree upon release in 2023\u003cbr\u003eCOLOUR: Deep black in colour.\u003cbr\u003eAROMA: A bouquet of smoke, dark plum, violets, coffee grind, glazed berries, liquorice, tar, sarsaparilla and incense PALATE: This is a big wine straight out the gate, it shows loads of concentrated fruits that are both energetic and powerful. As with all the top vintages from Holy Grail, this has the amazing ability to spring board into a soft natured wine. It starts out big but then changes gear and the finish comes across soft, fresh and lingering. Out of all the 2021 Single Vineyard bottlings, the Holy Grail is the one that seems to be the most reserved, it’s very tightly coiled up and it takes time in the decanter to start to see its inner energy and class emerge. The tannins are stony, with a lovely soft and lingering edge. They reverberate giving this wine excellent length, that slowly dissipates in the late palate. This wine is built for the long haul in cellaring, and I believe it will need 3 to 4 years to start showing its true potential. Patience is required but the rewards will be great.\u003c\/p\u003e\n\u003cp\u003eWINEMAKING\u003cbr\u003eSeveral small parcels from the Holy Grail vineyard were destemmed into 5T stainless steel. Gently pumped over 2-3 times daily, these parcels were pressed after an average time on skins of 10 days. All free run and pressings were combined in tank and was then racked off to barrel, to go through malolatic fermantation. The wine was bottled with minimum fining and no filtration.\u003cbr\u003eMATURATION: Aged for 18 months in 1-4 year old French oak barrels.
