We are committed to respecting the terroir and allowing it to express itself in the best possible way. Each of our grapes is sorted and selected at harvest time and in the cellar upon receipt. Our gravity-fed winery allows us to produce wines with the utmost respect for our grapes.
Slow and gentle pressing to optimize the purity of the fruit. We vinify our flint and clay-limestone terroirs separately using indigenous yeasts, then leave the wines to mature on fine lees for 9 months to bring out all the complexity of our terroirs and create balance.
Subtle nose with aromas of ripe lemon, notes of jasmine flowers and iodine.
The attack is frank and vibrant, delicious with white-fleshed fruits and a smoky finish reminiscent of our Silex.
A Unique Story
Located in Berry, in the heart of one of the most beautiful vineyards in the world, Sancerre is a medieval village with its old stones and cobbled streets.
This ancient citadel, unbeatable at 312 meters high, covers one of the hills on the Berry bank of the river, and takes its name from the Carolingian era during which a small hillside village, grouped around the church of Saint-Romble, was named by popular corruption of the same word, Saint-Cère, which would give Sancerre. The city was quickly fortified with a thick wall, which would play a strategic role in the Middle Ages, during the Hundred Years' War. The Wars of Religion got the better of the fortifications, destroyed in 1621; of the old stronghold, only a mutilated keep, the Tour des Fiefs, remains.
Following the phylloxera crisis in the 19th century, Sancerre's history took a new turn at the beginning of the 20th century when a quality vineyard was replanted, elevating this vineyard to one of the most renowned in the world. Today, viticulture and tourism drive the economy of Sancerre and the surrounding wine-growing hamlets of Amigny and Chavignol.
Our Terroir
Traces of the existence of vines in Sancerre can be found from the 6th century.
The Sancerre fault, which is a geological accident, is a miracle of nature on this terroir of a little less than 3,000 hectares which is divided into three parts: the white lands , made up of thick layers of predominantly marl separated by limestone banks, dating from the Jurassic period (146 million years), the "caillottes" , very stony rocks and also the oldest in the terroir (150 million years), and the clay-siliceous lands , the youngest in the terroir, whose layers are also the thinnest.
These geological characteristics make Sancerre a unique and particularly sought-after terroir.
Our History
This project, within the most beautiful Sauvignon Blanc appellation in the world, is above all the determination of an entrepreneurial family, the Oddo family, passionate about wine, and which then gave birth to Piton.
This Estate has the particularity of having its vines in a single commune, that of Sancerre which is the genesis of the appellation with its oldest terroirs, known as Silex.
The 8 hectares of Sauvignon Blanc, planted on these historic plots around the Piton de Sancerre, have been cultivated organically since the first year of the takeover. Soil cultivation and nutrition are our belief and our ambition.
Furthermore, the Domaine du Piton has also obtained recognition as High Environmental Value Level 3.
