Daniel-Etienne Defaix Chablis Cote De Lechet Premier Cru 2008 is a Chardonnay grown in poor Kimmeridgian marl soil with a steep southeast-facing slope. The wine undergoes natural yeast fermentation, followed by malolactic fermentation and 18 months of lees stirring to enhance its aromas and richness. It offers mineral notes with a buttery finish and overripe fruit flavors. Ideal to pair with dishes like Bresse chicken or veal with cream and morels.
