When I asked Didier Séguier how he managed to farm such a large estate this way, when so many smaller producers balk at the challenge, he explained that part of the secret has been fully engaging the Fèvre team: everyone is trained to spot signs of mildew and disease and share them on a team WhatsApp group; there are even prizes for the most vigilant employees. The approach certainly seems to have paid off in 2021, in any case, delivering wines with an old-school aesthetic but contemporary precision and charm; and the fact that they are bottled under Diam means that their gracious evolution in the cellar is assured. The approach certainly seems to have paid off in 2021, in any case, delivering wines with an old-school aesthetic but contemporary precision and charm; and the fact that they are bottled under Diam means that their gracious evolution in the cellar is assured. While the 2021s can't quite match the sheer concentration and intensity of 2019 and 2020, their classical profiles and clear differentiation by site will delight Chablis purists.

Williamfevre.fr

Located on the Cote des Vaillons, this appellation has 8 distinct lieux dits. In 2023, the pronounced aromas range from grapefruit to nectarine and green apple, laden with pungent, salty mineral notes and a little smoky reduction – a bit of everything, really. The texture is dense, almost impenetrable at this age, but enlivened by a lovely hint of bitterness at the end. It is truly a wine for the ages. Fresh, tensile wines that are classical in style have been the watchword here for some 20 years. The 2023 vintage marked the estate’s first year of official organic certification, though organic viticulture has been practiced since 2006, and herbicides have been eschewed since as early as 2000. Plant-based preparations—including botanical extracts, herbal tea infusions and seaweed derivatives—are employed to mitigate reliance on copper, copper hydroxide and sulfur—inputs that organic farming tends to necessitate.
