The vision was to wait until resources permitted and plant this Ares of land as specifically as possible. As with all the top vintages from Holy Grail, this has the amazing ability to spring board into a soft natured wine. It starts out big but then changes gear and the finish comes across soft, fresh and lingering. Out of all the 2021 Single Vineyard bottlings, the Holy Grail is the one that seems to be the most reserved, it’s very tightly coiled up and it takes time in the decanter to start to see its inner energy and class emerge. The tannins are stony, with a lovely soft and lingering edge. They reverberate giving this wine excellent length, that slowly dissipates in the late palate. This wine is built for the long haul in cellaring, and I believe it will need 3 to 4 years to start showing its true potential. Rain continued through December 2021 and January 2022, adding more disease pressure than most seasons. As summer went on the conditions were very mild with some humidity from the north creating the occasional issue to control. In all this meant that the fruit had to mature on the vine for longer than normal, but luckily the weather stabilised and we were able to bring in a healthy smaller crop of fruit with a natural higher acidity than the previous season. Cool climate viticulture is all about risk and reward and that is what we have in our 2022 Riesling.\u003c\/p\u003e\n\u003cp\u003eVINIFICATION\u003cbr\u003eThe fruit was whole bunch pressed then chilled to 4° with minimal Sulphur added in Coal River Valley after being picked on the 16th of April.
